Citrus Cilantro Chicken Recipe~ Grain Free Gluten Free

Ingredients
  

  • about 1 pound of chicken breast tenders about 1 to 1 1/2 inch wide strips
  • 1 lemon
  • 1 lime
  • 1 small orange
  • 1/2 cup chopped cilantro
  • 3 cloves garlic
  • 1/4 teaspoon sea salt
  • 1 tablespoon clarified butter
  • 1 tablespoon coconut oil
  • cayenne pepper
  • cumin

Instructions
 

  • Place the clarified butter and coconut oil in a large skillet over medium heat.
  • Spread the chicken tenders across the bottom of the skillet
  • While the chicken is cooking, mince the garlic and zest about 1/4 teaspoon from each of the citrus fruits.
  • Juice the orange, lemon and lime and set the juice aside.
  • Turn the chicken and keep cooking until it is almost cooked through, then add the garlic and zest.
  • If you like it a little spicy sprinkle the chicken with cayenne pepper and cumin.
  • Once the chicken is cooked pour in the citrus juice and let the mixture simmer for a couple more minutes before removing from the heat.
  • Serve topped with the cilantro.
