If you’re looking for a fun elegant frosting to top your cupcakes, cakes or even cookies, check out this delicious Raspberry Mascarpone Frosting recipe. It’s a rich frosting with wonderful fruity flavor. It would be wonderful for Valentine’s Day, or even for a spring party or your Easter brunch with it’s berry fresh flavor.

Raspberry Mascarpone frosting is a wonderful way to top your cupcakes, cake or even cookies!

Serves: 24
Ingredients
  • 3 cups powdered sugar
  • ½ cup butter
  • ½ cup mascarpone cheese
  • 1 teaspoon raspberry extract
  • 1-2 tablespoons milk
Instructions
  1. Whisk together the sugar, raspberry extract, mascarpone and butter, adding the milk as needed. Beat for about 3 minutes until fluffy and thick.
  2. Spoon the frosting into a piping bag and decorate cooled cupcakes as desired.

This frosting would be wonderful on top of a lemon cupcake, lemon and raspberry is one of my favorite flavor combinations! You could also use this to top a basic vanilla cupcake, sugar cookies or even a chocolate cake.

Give your cupcakes a little extra pizazz by adding a Wilton 1M large star tip to the end of a pastry bag. Add the Raspberry Mascarpone Frosting to the bag and squeeze gently while you swirl the icing from the outside in to make a soft peak in the center. You can also top the cupcakes with sprinkles or even a couple fresh raspberries!
