Low Carb Crab Stuffed Mushrooms

This low carb crab stuffed mushroom recipe is wonderful for a game night, or party appetizer.

Serves: about 4 servings
  • 12 (about) large mushroom caps (stems removed)
  • 8 ounces of cream cheese (room temperature)
  • 8 ounces crab meat
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • ½ cup + ¼ cup shredded Parmesan cheese
  • 1 teaspoon minced scallions
  1. Preheat the oven to 350' Fahrenheit.
  2. Wash and dry the mushroom caps and place them in a baking dish. I lined my baking dish with parchment for easy cleanup!
  3. Mix together the cream cheese, crab meat, salt, pepper, ½ cup of the Parmesan cheese and the minced scallions, until well combined.
  4. Spoon the mixture into the mushroom caps. It should stuff about 12 mushrooms. You may get a few more or less depending on your mushroom sizes.
  5. Top with the other ¼ cup of Parmesan cheese and bake at 350` F for about 20 minutes, or until they start to turn golden brown on top.
